No-Peek Chicken
1 can cream of celery soup, undiluted
1 can cream of mushroom soup, undiluted
11/2 cups milk
11/4 cups white rice, uncooked
4 whole chicken legs (includes leg, thigh and hind quarter), skin removed
1/2 envelope dry onion soup mix
Spray a 9x13-inch dish with non-stick
spray; set aside.
In a medium bowl, whisk soups and milk until smooth. Stir in rice. Pour into
pan. Arrange chicken over rice. Sprinkle soup mix over chicken and rice. Cover
with foil and bake at 350 degrees for 1 1/2 hours. Do not peek. Remove from oven
and let stand 10 minutes before serving. Makes 4 servings. .
Note: For a low cholesterol recipe, use
reduced fat soups, brown rice and skim milk.
