Baked Ham with Pineapple Sauce
1 (2 pound) fully cooked lean ham
1 (20-ounce) can pineapple rings in juice
2 tablespoons frozen orange juice
concentrate
1 tablespoon mustard
1 tablespoon cornstarch
Slice ham into eight pieces. Arrange in a
9x13-inch pan, overlapping, if necessary. Top each slice with pineapple ring;
set aside.
Measure pineapple juice — should have
about one cup. Place in small saucepan. Add orange juice concentrate, mustard
and cornstarch to pan. Cook and stir over medium heat about two minutes or until
bubbly and thick. Pour over ham. Cover with foil and bake at 350 degrees for 30
minutes or until ham is heated.
