Cheesy Spinach Soup
1/4 cup chopped onion
1 tablespoon soft reduced calorie margarine
2 cups skim milk
3/4 pound (12 ounces) Velveeta Light Pasteurized Prepared Cheese Product, cut up
1 package (10 ounces) frozen chopped spinach, cooked, well drained
1/8 teaspoon ground nutmeg
Dash pepper
Cook and stir onion in reduced calorie margarine in 2-quart saucepan until
tender.
Add remaining ingredients; stir on low heat until prepared cheese product is
melted and mixture is thoroughly heated.
Variation: Substitute frozen chopped broccoli for spinach.
Microwave: Microwave onion and reduced calorie margarine in 2-quart microwavable
casserole on HIGH 30 seconds to 1 minute or until onion is tender. Stir in
remaining ingredients.
Microwave 6 to 8 minutes or until thoroughly heated, stirring every 3 minutes.
Continue as directed.
Makes 4 servings
