Milky-Way Cake
(6 slightly different recipes!)


Recipe #1:

3 (2.05 oz.) Milky Way candy bars
2 T. + 1-1/4 C. milk
2 C. flour
3/4 C. unsweetened cocoa powder
1 T. baking powder
1/2 t. baking soda
1/4 t. salt
1/2 C. unsalted butter, softened
1 C. sugar
1/2 C. packed brown sugar
1/2 t. vanilla
2 large eggs

Butter two 9" round cake pans; line bottoms with parchment circles; butter parchment. Lightly flour pans.
In a small saucepan, melt candy bars & 2 T. milk over medium-low heat 10 minutes (??- Tracy), stir until smooth. Remove from heat; let cool 10 minutes.
In a medium bowl, combine dry ingredients; whisk together. In a large mixer bowl, beat butter, sugars and vanilla on medium-high speed until light & fluffy. Add eggs, one at a time, beating well & scraping bowl after each addition. Beat in melted candy mixture. On low speed, beat in half the dry ingredients and 3/4 C. milk, scraping down the side of the bowl. Beat in the remaining dry ingredients & milk. Pour batter into prepared pans. Bake at 350° for 35-40 minutes, or until a pick comes out clean. Cool in pans on racks 10 minutes; remove from pans to racks, remove the paper & allow to cool completely.

Caramel Buttercream Frosting:
50 caramels, unwrapped
1/2 C. milk
1 C. unsalted butter, softened
5 C. powdered sugar, sifted
1/2 t. vanilla

In a medium saucepan, melt caramels over medium heat, stirring occasionally, 15 minutes. Whisk in milk until smooth. Remove from heat; let cool to room temperature, about 1 hour.
In a large bowl, beat butter, sugar & vanilla until blended. On medium-high speed, beat 3 minutes. Beat in caramel mixture & beat 2 minutes more, until light & fluffy.
Place one cake layer on platter; spread with 1/3 of the frosting. Place remaining layer on top; cover top & sides with remaining frosting. Garnish with sliced Milky Way bars, if desired.

 

Recipe #2:

8 Milky Way bars
1/2 c. butter
2 c. sugar
4 eggs
1 Tbsp. vanilla
1/2 tsp. soda
1 1/4 c. buttermilk
3 c. flour
1 c. nuts

Combine candy and 1/2 cup butter in pan over low heat until melted; cool. Cream, sugar and 1/2 cup soft butter. Add eggs and beat. Combine buttermilk and soda. Add all ingredients and bake in tube pan at 325 degrees for 1 hour and 20 minutes.
Let cool in pan for 1 hour.

Frosting For Milky Way Cake:
2 1/2 c. sugar
1/2 c. butter
1 c. canned milk
16 oz. chocolate chips
1 c. marshmallow cream
Cook sugar, milk and butter to soft ball stage. Add chocolate chips, marshmallow cream and vanilla to taste. Spread on cake.

 

Recipe #3

8 (1 3/4 oz.) Milky Ways
3 sticks butter
2 c. sugar
4 eggs, well beaten
2 1/2 c. flour
1/4 tsp. baking soda
1 1/4 c. buttermilk
1 tsp. vanilla
1 c. chopped pecans
powdered sugar

Melt Milky Ways with 1 stick butter; remove from heat and let cool. Cream remaining 2 sticks butter with sugar. Add beaten eggs and cooled chocolate mixture. Sift flour and baking soda together. Alternately, add flour and buttermilk to the butter, blending well. Add vanilla and nuts. Grease and dust with powdered sugar three 9-inch cake pans. Bake at 325 degrees for 30 to 45 minutes.

Icing For Milky Way Cake:
2 1/2 c. sugar
1 c. evaporated milk
1 stick butter
1 c. marshmallow cream
1 (6 oz.) pkg. chocolate chips
1 c. pecans, chopped
Combine sugar and evaporated milk. Cook to soft ball stage. Remove from heat and add butter, marshmallow cream and chocolate chips, stirring until all have melted. Add pecans.

 

Recipe #4:

2 c. sugar
1 c. Crisco
4 eggs
2 1/2 c. flour
1 tsp. salt
1 1/2 c. buttermilk
1/2 tsp. soda
1 tsp. vanilla
6 (1 11/16) Milky bars
1/2 c. margarine

Beat sugar and Crisco until creamy and add eggs. Then alternate flour and salt with buttermilk and soda. Mix into sugar mixture. Melt candy bars and butter. Add this and vanilla. Makes 3 layers. Bake 30 minutes at 350 degrees.

Milky Way Cake Icing:
2 c. sugar
1 (13 oz.) can Pet milk
1/2 c. butter
1 (6 oz.) bar semi-sweet
chocolate
1 c. Marshmallow Creme
1 tsp. vanilla
Combine sugar, milk and butter and cook until it forms a soft ball. Add chocolate, Marshmallow Creme and vanilla. Spread on cake.

 

Recipe #5:

8 Milky Way candy bars
2 sticks oleo
2 c. sugar
4 eggs
2 1/2 c. flour
1/2 tsp. soda
1 1/4 c. buttermilk
1 c. pecans, chopped

Melt Milky Way candy bars and 1 stick oleo; set aside. Cream sugar and 1 stick oleo; add eggs. Add alternately flour and soda with buttermilk. Add melted candy and oleo mixture. Add pecans; bake in tube pan (greased and floured) in a 325 degrees oven for 1 hour and 10 minutes or until done.

Milky Way Cake Icing:
2 1/2 c. sugar
1 c. evaporated milk
1 c. marshmallow cream
1 (6 oz.) pkg. semi-sweet
chocolate chips
1 stick oleo
Cook to soft ball stage the sugar and milk. Add chocolate chips, marshmallow cream and oleo. Stir until all are melted. Then put the icing on the cooled cake. Let cake set for a couple of hours or until icing is hard and dried.

 

Recipe #6:

6 Milky Way candy bars
2 sticks butter
2 c. sugar
4 eggs
1 tsp. vanilla
2 1/2 c. plain flour
1/2 tsp. salt
1/2 tsp. soda
1 1/2 c. buttermilk

Melt candy with one stick butter; set aside. Cream sugar and one stick butter. Add eggs, flour and salt. Put soda in buttermilk. Mix well. Add candy mixture and vanilla. Bake at 325 degrees for 1 hour and 10 minutes in greased and floured tube pan.

Icing For Milky Way Cake:
2 1/2 c. sugar
1 c. marshmallow cream
1 c. chopped nuts
1 c. Pet milk
6 oz. chocolate chips
1 stick butter
Cook sugar and milk to soft ball stage. Take off stove; add chocolate chips, butter and marshmallow cream. Stir until it spreads easily and then add nuts. Cut cake in half, spreading on bottom half, then on top half.
