Creme De Menthe
Cheesecake
2- 8 oz packages PHILADELPHIA BRAND cream cheese, softened.
1/2 C. sugar.........................1/2 t. vanilla
2 eggs.................................4 t. green creme de menthe
1 KEEBLER READY CRUST chocolate flavored pie crust (9 inch)
Mix cream cheese, sugar & vanilla at medium speed with electric mixer until well blended. Add eggs; mix until blended. Blend in creme de menthe. Pour into crust.
Bake at 350 degrees for 40 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight. Garnish with chocolate leaves & twigs.
Variation- Mint Bon Bon Cheesecake;
Substitute 1/4 teaspoon peppermint extract & a few drops
green food coloring in place of creme de menthe. Stir in 1/2 C.
mini semi-sweet chocolate chips into batter. Sprinkle with
additional 1/4 C. chips before baking.
To make chocolate twigs:
Place 1 square semisweet chocolate in resealable plastic food
storage bag. Close bag tightly & microwave on high about 1
minute, or until the chocolate is melted. Snip a tiny piece off
corner. Drizzle the chocolate thru snipped hole onto wax-paper
lined cookie sheet in the form of a twig. Refrigerate about 30
minutes, or until firm.
