Pumpkin Spice Butter Spread
(Use on quick breads, toast, whatever!)
4 tablespoons (1/2 stick) unsalted butter, softened
4 tablespoons canned pumpkin puree
1 teaspoon brown sugar
1 teaspoon cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground ginger
1/8 teaspoon freshly grated or dried nutmeg
1/8 teaspoon salt
Combine butter with pumpkin, sugar and spices and mix well. Keep tightly covered in the refrigerator up to three weeks.
* NOTE: 1/2 teaspoon of pumpkin pie spice can be substituted for cloves, ginger and nutmeg.
