Pineapple Spice Loaf
2 C. sifted flour
2 t. baking powder
1 t. salt
1/2 t. baking soda
1/2 t. ground ginger
1/2 t. ground nutmeg
1/3 C. packed brown sugar
1/3 C. vegetable oil
1 t. vanilla
2 eggs
1 (8 oz.) can crushed pineapple
Into a large bowl, sift together first 6 ingredients. Stir in brown sugar & set aside.
In a small bowl, mix oil, vanilla & eggs until well-blended. Stir in undrained pineapple. Add to dry ingredients; stir until just moistened. Pour batter into a greased 9x5x3" loaf pan.
Bake at 350° for 55 to 60 minutes, or until loaf is golden brown & toothpick comes out clean. Cool in pan for 10 minutes, remove to a rack to cool completely.
