Pineapple-Banana-Coconut Bread
1/2 C. butter....................................1 t. baking powder
1 C.sugar........................................1/2 t. salt
2 eggs.............................................1/2 C. mashed banana
2 C. flour.........................................1-8 oz. can crushed pineapple, drained
1/2 t. baking soda............................1/2 C. shredded coconut
Cream butter & sugar. Add eggs, one at a time, beating well after each. Sift dry ingredients & add to creamed mixture.
Fold in banana, pineapple, & coconut. Pour mixture into greased & floured loaf pans.
Bake at 350 degrees, 50 to 60 minutes for large loaf pans, or until cake tester comes out clean. Cool in pans 10 minutes, remove to wire rack.
(Tracy's Note: A double batch of the recipe will yield {8} 5-3/4 x 3" loaves, filled 1/2 full. Bake 30 minutes or so.)
