Double Pistachio Cake
(From my Birth-Mom, Janice)


1 (4 serving size) package pistachio instant pudding & pie filling

1 (2 layer size) white or yellow cake mix

4 eggs

1 C. club soda or water

1/4 C. oil

1/2 C chopped nuts

Mix all above ingredients together, beat for 2 minutes at medium speed. Bake in a greased & floured 13x9x2" pan at 350° for 40-45 minutes, or until pick comes out clean. Frost when cool with:

Fluffy Pistachio Frosting

pour 1-1/2 C. milk into a deep, narrow bottomed bowl. Add 1 envelope Dream Whip & 1 package (4 serving size) pistachio instant pudding/pie filling. Beat at low speed to blend; increase speed to high & whip till soft peaks form (4 to 6 min.). Spread on cooled cake- Keep refrigerated.
