Pork Chop Scallop
4 pork loin or rib chops, 1/2 to 3/4" thick
salt & pepper
1 package of scalloped potatoes
2 T. chopped pimento
Trim excess fat from chops; grease a 10" skillet with fat. Brown chops on both sides; season with salt & pepper. Remove chops from skillet. Empty potatoes & packet of sauce mix into skillet. Stir in pimento & amounts of water & milk called for on package. heat to boiling, stirring occasionally. Reduce heat; place pork chops on top. Cover; simmer 30-35 minutes or until potatoes are tender. Yield: 4 servings.
