Pudding Candy


1 (3 oz.) pkg. pudding mix
1 c. sugar
1 Tbsp. butter
1/2 c. evaporated milk
1 c. chopped nuts or coconut (or 1/2 c. of each)

Mix dry pudding mix and sugar in 2 quart saucepan. Add butter and stir in milk. Cook and stir over medium heat until mixture boils. Lower heat and boil gently for 3 minutes, stirring constantly. Remove from heat and  stir in nuts or coconut and vanilla. Beat for a few minutes until mixture begins to get dull. Pour by tablespoons on wax paper to cool.
If candy thickens too much before you have finished dropping, add a few drops of hot water.
Variations: vanilla pudding with coconut; butterscotch pudding with pecans; lemon pudding with coconut;  cherry pudding with coconut; chocolate pudding with walnuts
