Pumpkin Candy


1 Qt. pumpkin, cubed

Put in pan & cover with water. Bring to a boil & cook 15 to 20 minutes. Drain, but save, the liquid- approximately 1-1/2 cups. Mix liquid with 1 C. brown sugar.

Pour over pumpkin & boil for another 15 minutes. Let pumpkin pieces stand overnight in the syrup.

The next day, boil pumpkin pieces for another 5 minutes, then take them from the syrup & set them on a waxed paper-lined tray. Set in the sun to dry (be aware of bugs). After about 10 hours, roll in granulated sugar & enjoy!
