Pumpkin Fritters


1 egg.................................................1/4 t. baking soda

1/2 C. sugar.......................................2 t. pumpkin pie spice

1/2 t. salt...........................................1-1/2 C. canned or fresh, cooked, & mashed pumpkin

1/2 t. ginger, ground..........................1 T. melted margarine

1 C flour...........................................1 t. vanilla

powdered sugar

Beat eggs, sugar & salt till light & fluffy. Blend in pumpkin. Sift flour, baking powder & baking soda together. Beat into egg mixture.

Add spices, margarine, & vanilla. Mix well. Drop by tablespoonfuls onto well greased, hot griddle or fry in deep, hot fat a tablespoon at a time. watch carefully, these scorch easily.

Sprinkle with powdered sugar. Fritters taste best served warm, with meat or fish.
