Pumpkin Bread

(Moist & yummy!)


1 C. vegetable oil........................1 t. nutmeg

4 eggs........................................2 t. baking soda

2/3 C. water..............................1 t. cinnamon

2 C. cooked pumpkin (16 oz.)...3 C. sugar

3-1/2 C. flour.............................1 C. raisins (optional)

1-1/2 t. salt.................................1 C. nuts (optional)

Cook raisins in 1-1/2 C. water til soft, drain & cool. In a medium bowl combine oil, eggs, water, & sugar, set aside. In a large bowl, sift together flour, salt, nutmeg, soda, & cinnamon. Make a well in center of dry ingredients & add pumpkin, along with oil/sugar mixture. Blend till dry ingredients are moistened. Stir in raisins & nuts. Bake in greased loaf pans, at 350 degrees, till pick inserted in center comes out clean.

( I like to sprinkle a cinnamon/sugar mixture on top of my unbaked loaves. It makes a nice dark golden top, & is crunchy. This bread freezes well, too)
