Pumpkin Pudding
3 eggs.....................................................3 C. sugar
1 t. salt....................................................1-1/2 sticks margarine
1 t. ginger................................................2 C. flour, scant (a little less)
1 t. pumpkin pie spice.............................2 cans evaporated milk
2 t. cinnamon..........................................1 can water
2 t. vanilla...............................................3-16 oz. cans pumpkin
Put eggs, salt, ginger, pie spice, cinnamon, vanilla & 1 C. sugar in mixing bowl or blender, mix well.
In large bowl, put pumpkin, milk, water, and remainder of sugar. Add soft margarine (not melted) & mix together. Then add sifted flour, alternately with the egg mixture, stir til blended.
Bake in a heavy aluminum pan, 9 x 14 x 2". Bake 1 hour at 400 degrees, then reduce heat to 350 degrees & bake another hour. If pudding is browning too much, reduce heat. This will cut into 40 to 50 pieces.
