Praline Pumpkin Pie
4 eggs
1 qt. pumpkin (32 oz. or 4 C.)
1 c. sugar
1 c. brown sugar
2 tsp. pumpkin pie spice
2 tsp. salt
1 tall can evaporated milk
Topping:
3 Tbsp. oleo
2/3 c. packed brown sugar
2/3 c. pecans
Mix in order: eggs, pumpkin, sugar, brown sugar, pumpkin pie spice, salt and evaporated
milk. Beat after each addition. Pour into two 9-inch uncooked pie shells. Bake at 425
degrees for 15 minutes. Lower heat to 375 degrees for 20 minutes. Mix topping; spoon
topping onto edges of pie. Bake 10 more minutes. Do not overbake. Custard will set as pie
cools. Makes 2 pies.
