Pumpkin Waffles
1 C. all-purpose flour
2 t. baking powder
3/4 t. cinnamon
1/8 t. salt
1/8 t. ground cloves
1 C. 1% milk
1/2 C. pumpkin puree
1/4 C. packed dark brown sugar
1 T. vegetable oil
1 large egg, lightly beaten
cooking spray
Whisk together dry ingredients in a large bowl; make a well in center of mixture. Combine milk, pumpkin, brown sugar, oil & egg in a large measuring cup, then add to flour mixture. Stir just until moist.
Coat a waffle iron with cooking spray; preheat. Spoon about 1/4 C. batter per waffle onto hot iron, spreading to the edges. Cook 5-7 minutes or until steaming stops; repeat procedure with remaining batter. Top with maple syrup & chopped nuts. Yield: 8 waffles
