Cake for a Puppy

2/3 C. ripe bananas
1/2 C. softened butter
3 large eggs
3/4 C. water
2 C. unbleached white flour
2 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1/2 C. chopped pecans
1/2 C. raisins

In a bowl, beat together mashed bananas and butter until creamy. Add eggs and water, beat well. Stir in dry ingredients, beat until smooth. Add nuts and raisins. Spoon batter evenly into oiled & floured bundt pan. Bake at 350 for 35 minutes. Cool on wire rack 5 minutes. Remove from pan, replace on rack and cool.

ICING

2 C. mashed bananas
1 T. butter
6 T. carob powder
2 t. vanilla
3 T. unbleached flour
1 tsp. cinnamon

Blend thoroughly and spread on cooled cake. Sprinkle with chopped pecans. The frosting contains carob, which is a safe (almost tastes like) chocolate substitute for dogs.
