Purple Lady Salad
(from my Birth-Mom, Janice)
2 (3 oz. each) packages blueberry jello
Make & cool till it starts to set. Then add:
1 (20 oz.) can of crushed pineapple
1 can blueberry pie filling
Nuts (optional)
Refrigerate till set.
It may be topped with Cool Whip, or make a topping of 1/2 C. sugar, 1 C. pineapple juice, 2 T. flour & 1 slightly beaten egg. Cook, stirring constantly. remove from stove, add 2 T. butter & cool, then add 1 carton of cool whip. Put on top of set salad.
(I agree, this recipe is kind of vague. I don't know if you drain the pineapple, but I think I would. And as far as cooking the topping- I guess I would try over medium heat till slightly thickened. Tracy)
