Back-to-School Breakfast Treat
1/2 lb. bacon, cooked until crisp
1/2 c. butter
1/2 c. sugar
1/4 c. dark brown sugar
1 egg
1 c. pre-sifted flour (use right out of bag)
1/4 tsp. baking soda
2 c. corn flakes
3/4 c. raisins
1/2 tsp. vanilla
1/2 tsp. cinnamon
Preheat oven to 350 degrees. Cream butter and both sugars until light and
fluffy; add egg and beat well. Combine flour and baking soda; mix with butter
mixture. Crumble bacon and add to batter; add corn flakes, raisins, vanilla and
cinnamon. Mix well. Place rounded tablespoonfuls 2 inches apart on an ungreased
baking sheet. Bake approximately 12 minutes or until golden brown. Remove from
baking pan and cool. Yields 24 breakfast cookies. Allow to cool completely and store in a cookie tin for quick
and easy school-morning breakfasts. Great for trips or camping.
