Common School Blueberry Muffins
1/4 c. sugar
2 c. flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1 c. blueberries
1 egg, beaten
1 c. milk
1/4 c. melted butter
Preheat oven to 400 degrees. Grease tins. Sift together dry ingredients; add
blueberries to flour mixture and stir gently. Mix egg, milk and butter together.
Add to flour mixture; mix only enough to moisten flour. Do not beat. Fill tins
¾ full. Bake 25 minutes.
