After School Chicken Fritters


1 egg
1/4 c. milk
1 c. flour
1 tsp. baking powder
1/2 tsp. salt
1 1/2 c. chicken, cooked and chopped
bread crumbs
oil for deep frying

Lightly beat egg and stir in the milk. Sift flour together with baking powder and salt. Stir into egg mixture.
Fold in the chicken. Chill in the refrigerator for 30 minutes. Form into 1 1/2-inch balls and roll in the breadcrumbs. Drop the balls a few at a time into oil preheated to 375 degrees. Deep fry for 1 minute or until golden brown. Drain well on paper towels before serving.
