Chocolate-Almond Cookie Bars
3 C. flour
3/4 t. salt
1 C. butter, at room temperature
1 C. sugar
3 t. vanilla, divided
1-1/2 C. blanched almonds, chopped
4 eggs
1 C. light brown sugar
1/4 C. light corn syrup
1-1/2 C. semisweet chocolate chips
Melted chocolate chips, optional
Preheat oven to 350°. Line a 13x9" pan with foil, overhanging sides by 2". Combine flour & salt; reserve.
Spread almonds on ungreased baking sheet. Bake until lightly browned, 4-5 minutes; cool.
Beat butter & sugar until fluffy. Beat in 1 t. vanilla. Reduce speed to low; gradually beat in flour mixture until sandy. Press dough into prepared pan. Bake until golden around edges, about 15 minutes.
Beat eggs, brown sugar, syrup and remaining vanilla until smooth. Stir in 1-1/2 C. chips and cooled almonds; pour over hot crust. Bake 25-30 minutes. Cool completely in pan on wire rack.
Use foil to lift whole bar from pan, cut into bars & drizzle with melted chocolate.
