Apple Cake


9 T. unsalted butter
3 Golden Delicious or Gala apples, peeled, cored & sliced
1-1/2 C. flour
1-1/2 t. baking powder
1 t. cinnamon
1/2 t. salt
1 C. sugar
grated zest of 1/2 lemon
2 large eggs
1/4 C. milk
powdered sugar, for dusting
cinnamon, for dusting

Melt 1 T. of the butter in a skillet over medium heat. Add apples and cook until softened, about 10 minutes.

Heat oven to 375°. Butter & flour a 6-cup Bundt pan. Combine flour, baking powder, cinnamon & salt; set aside. In a large bowl, beat remaining 8 T. butter with the sugar & lemon zest until light & fluffy. Beat in eggs, one at a time, until well-mixed. Using a wooden spoon, beat in flour mixture in three batches, alternating with milk in two batches. Stir in apples.

Scrape batter into pan & bake until a pick comes out clean, 50-60 minutes. Turn out onto a wire rack to cool completely. Just before serving, dust with powdered sugar & cinnamon. Serve with fresh whipped cream.
