Peach Betty
1/4 c. butter or margarine
2 c. soft bread crumbs
6 medium-sized peaches, peeled
and sliced
1/2 tsp. nutmeg
1/2 c. brown sugar
1/2 tsp. cinnamon
1 Tbsp. lemon juice
2 tsp. grated lemon rind
1/4 c. hot water
Melt fat in skillet or frying pan. Add bread crumbs and
stir over medium heat until crumbs are golden. Skin peaches;
pit and slice into a mixing bowl. Sprinkle peaches with brown
sugar, spices, lemon juice and rind; mix thoroughly. Place 1/3
of bread crumbs in greased baking dish; arrange half of
peaches on top of crumbs. Cover peaches with another 1/3 of
crumbs. Add remaining peaches and top with remaining crumbs.
Pour on hot water. Bake in moderate 375 degrees oven for 40 minutes
or until peaches are tender. Makes 6 servings.
