Peach Booze
1 fifth either gin, vodka or
brandy (90 proof if
possible)
1 lb. perfect peaches
1 lb. granulated sugar
Wash peaches very gently so as not to bruise them; dry
on towel. Place peaches in a clean 2 quart jar; pour the pound
of sugar over peaches. Do not stir or shake. Pour liquor over
peaches and sugar. Do not stir. Cover with a lid. Put the
jar on a high, safe shelf and let stand for 3 months. Strain
into 2 (1 quart) bottles. The peach meat will be dissolved and
the color gorgeous.
Note: Instead of peaches, you can substitute most
fruits (1 pound of cherries, oranges, tangerines, apricots,
plums). Use the fruit unpeeled and follow the preceding
recipe.
