Cranberry-Apple Crisp
cooking oil spray
8 C. peeled, sliced tart apples (about 7 large apples)
1/4 C. dried cranberries (or raisins, if desired)
3/4 C. packed light brown sugar
1/3 C. flour
1 t. cinnamon
Preheat oven to 375°. Spray a 13x9" baking dish with cooking spray. Place apples & cranberries in prepared dish. In a small bowl, mix sugar, flour & cinnamon; spray cooking spray into the mixture for 10 seconds. Squeeze mixture between fingers until slightly crumbly; sprinkle over fruit. Spray topping with cooking spray for 5 seconds until completely moistened. Bake for 30 minutes. Turn on broiler; broil casserole, close to source of heat, for 3-5 minutes or until edges of apples are browned & bubbly. Makes 8 servings.
