Ginger Crinkle Cookies


2/3 C. vegetable oil
1 C. sugar
1 egg
4 T. molasses
2 t. baking soda
3/4 t. salt
1 t. cinnamon
1 t. ginger
2 C. sifted flour
xtra bowl of powdered sugar to roll cookie in

Using a wooden spoon, mix oil & sugar in a large bowl. Add egg & molasses, beat well. Add in dry ingredients & mix well. Roll spoonfuls of mixture into balls in palms of hands; roll in sugar to coat. Place balls on parchment-lined cookie sheet, bake at 350° for 7 minutes or until set & very lightly browned around edges. Cool on sheet 1 minute, remove to rack to cool completely. Store in an airtight container
