Peaches Melba
4 perfectly ripe peaches
1/2 c. brandy
1 c. sugar
1/2 c. water
1 tsp. vanilla
1 c. fresh raspberries
1 pt. best quality vanilla ice
cream, homemade or store
bought
Peel peaches, halve them, stone them and soak them in
brandy. Boil sugar with water until a little dropped from
spoon spins a small thread. Stir in vanilla. Reserve 2
tablespoons syrup to pour over peaches; stir raspberries into
remaining syrup, very gently so as not to crush them. Chill 4
serving dishes, peaches and raspberries. Just before serving,
pave serving dishes with layer of ice cream; lay peach halves
on top of it; pour reserved syrup over them and top with
raspberry puree. Serves 4.
