Peach Preserves


Recipe 1:

4 c. or 2 lb. prepared peaches
2 Tbsp. lemon juice
5 1/2 c. sugar
1 box Sure-Jell

Peel and pit fully ripe peaches. Cut each peach into 8 slices and measure. Add lemon juice to fruit. Measure sugar and set aside. Measure fruit, and if necessary add water to equal exact amount. In an 8-quart saucepan, mix Sure-Jell with fruit. Over high heat, quickly bring mixture to hard boil. Stir occasionally. Add sugar all at once, then bring back to a full rolling boil that cannot be stirred down. Boil 5 minutes, stirring constantly. Pour into jars. Skim off foam and seal following package directions.

 

Recipe 2:

6 lb. (12) firm peaches
5 c. sugar
1/2 c. lemon juice
2 tsp. salt
8 (1/2 pt.) jars

Peel peaches and cut into slices. In saucepan over medium heat, heat peaches, sugar, juice and salt to boiling, stirring frequently. Reduce to medium-low. Cook about 1 hour or until fruit is translucent and syrup is slightly thickened, stir frequently. Ladle hot peach mixture into hot jars to 1/4 inch from the top. Seal & process gently for 15 minutes. Cool at least 12 hours.

 

Recipe 3:

2 qt. peaches
1/2 c. water
6 c. sugar
1 tsp. vanilla

Cook peaches and water 10 minutes. Add sugar and cook 45 minutes. About 20 minutes before they are done, add vanilla. Pour in jars and seal.
