Sour Cream Cake


1 package white or yellow pudding-in-the-mix cake mix

1 C. sour cream......................1/2 C. canola oil

1/4 C. sugar............................4 eggs

1/4 C. water

Place all ingredients in a large mixer bowl & beat for two minutes at medium speed. Pour into two greased & floured 8" cake pans. Bake at 350° for 30 minutes, or until pick comes out clean. Cool in pans on racks for 10 minutes; invert to racks to cool completely. Frost cooled cake with buttercream or chocolate frosting.

Chocolate Sour Cream Frosting 

1/3 C butter ,softened

1/2 C. sour cream

3 C. powdered sugar

1 t. vanilla

3 oz. (3 squares) melted, unsweetened chocolate

Mix butter & sour cream in large mixer bowl on low speed. Add  powdered sugar gradually. More sugar may be needed for firmer icing. Add vanilla & blend. Add melted chocolate, scrape sides & bottom of bowl well; beat till well blended & smooth. Icing will stiffen slightly as it sets. Frosts an 8" layer cake.
