Almost Fat-Free Brownies


1/2 C. cake flour, sifted
1/2 C. unsweetened cocoa powder
1/4 t. salt
2 egg whites
1 large egg
3/4 C. sugar
6 T. unsweetened applesauce
2 T. vegetable oil
1-1/2 t. vanilla
1 T. chopped walnuts (optional)

Spray an 8" square baking pan with nonstick spray & set aside.

In a medium bowl, combine flour, cocoa & salt; mix well. In a large bowl, whisk together egg whites, egg, sugar, applesauce, oil & vanilla. Stir in flour mixture until just blended; do not overmix. Pour batter into prepared pan; sprinkle with walnuts.

Bake at 350° for about 25 minutes, until just set & a pick comes out clean. Cool in pan on wire rack for at least 15 minutes. Cut into 12 squares. Each serving: 112 calories, 4g fat.

Note: for chewier brownies, replace the cake flour with 7 T. all-purpose flour.
