Grasshopper Brownies


Brownies:
1 package (21.5 oz.) fudge brownie mix
1/2 C. water
1/2 C. oil
1 egg

Filling:
1/2 C. margarine or butter, softened
1 package (3 oz.) cream cheese, softened
2-1/2 C. powdered sugar
3 T. crème de menthe syrup
green food coloring, if desired

Frosting:
1 package (6 oz.) semi-sweet chocolate chips (1 cup)
1/3 C. margarine

Grease bottom only of 13x9" pan. In a large bowl, combine all brownie ingredients; beat 50 strokes by hand. Spread in greased pan. Bake at 350° for 33-35 minutes or until set. Do NOT overbake. Cool completely.

For Filling: In a medium bowl, beat margarine & cream cheese till light & fluffy. Add powdered sugar, syrup & coloring; beat till smooth. Spread evenly over cooled brownies.

For Frosting: In a small saucepan, melt chocolate & margarine over low heat, stirring, until smooth. Remove from heat & cool 15 minutes. Pour evenly over mint filling. Spread carefully to cover filling. Refrigerate 1 hour before cutting into 48 bars- store in refrigerator.
