Old-Fashioned Beef Stew
1/2 C. flour*................................................4 carrots, cut into 1" slices
1 t. salt.........................................................1 green pepper, cut into strips
1/4 t. pepper................................................1 C. sliced celery (about 1" pieces)
2 lb. stew beef, in 1" pieces...........................1/2 C. diced onion
2 T. shortening..............................................1 T. salt
6 C. hot water...............................................2 beef bouillon cubes
3 pared medium potatoes, cut into 1" cubes....1 bay leaf
1 medium turnip, cut into 1" cubes
Mix flour, 1 t. salt & the pepper. Coat meat with flour mixture. Melt shortening in a large skillet; brown meat thoroughly.
Add water; heat to boiling. Reduce heat, cover & simmer 2 hours. Stir in remaining ingredients. Simmer 30 minutes or until vegetables are tender.
If desired, thicken stew. In a covered jar, shake 1 C. cold water & 2-4 T. flour till blended. Stir into stew; heat to boiling, stirring occasionally. Boil & stir 1 minute. Yield: 6 servings
(*If using self-rising flour, decrease 1 t. salt to 1/2 t.)
