Pecan Sticky Muffins
2 C. flour
1 T. baking powder
1 t. cinnamon
1/4 t. salt
2 eggs
1 C. Milk
1/4 C. vegetable oil
1/2 C. packed brown sugar
1 t. vanilla
Topping:
1/4 C. butter or margarine, melted
1/4 C. packed brown sugar
1 C. chopped pecans
In a large bowl, combine first 4 ingredients. In another bowl, beat the eggs, milk, oil, sugar & vanilla until smooth. Stir into dry ingredients just until moistened.
Into each greased muffin cup, spoon 1 t. melted butter, 1 t. brown sugar & 1 heaping T. pecans. Top each with 1/4 C. batter. Bake at 350° for 25-30 minutes or until muffins test done. Invert pan onto a piece of foil. Let stand for 2 minutes; remove pan. Serve warm. Yield: 1 dozen muffins.
