Sunny Citrus Frosting

1 lb. confectioners sugar
5 Tbsp. butter
4 Tbsp. cream cheese
1 1/2 tsp. vanilla
dash of salt
1 orange or 1 lemon or 1/2 of each

Place confectioners sugar, butter, cream cheese, vanilla and salt in electric mixing bowl and add the grated fruit rind from the whole orange or lemon or 1/2 of both. Squeeze in the juice from 1/2 the fruit and beat at high speed until light and creamy (at least 5 minutes). If necessary, add more fruit juice.
