Make-Ahead Potatoes for Thanksgiving


8 to 10 medium potatoes, peeled
1 c. sour cream
1 (8 oz.) pkg. cream cheese, softened
4 Tbsp. butter
1/3 c. chives, chopped
salt and pepper to taste
butter
paprika

Boil potatoes until tender. Mix sour cream and cream cheese together; add to drained hot potatoes. Beat until smooth. Add butter and seasonings to taste. Place in greased 2-quart casserole; dot with butter. Sprinkle paprika on top. Bake at 350 degrees for 25 minutes. Serves 8 to 10.
