Thanksgiving Pumpkin Cookies
1/2 c. butter
1 1/2 c. brown sugar
2 eggs
2 3/4 c. flour
1 Tbsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1 3/4 c. canned pumpkin
1 c. raisins
1 c. chopped nuts
Cream butter and sugar. Add eggs; blend well. Sift dry ingredients together. Add
to creamed mixture alternately with pumpkin. Stir in raisins and nuts. Drop by
rounded teaspoonfuls on well greased baking sheets. Bake at 400 degrees for 15
minutes. Makes 4 dozen.
