Chocolate Chip Graham Bars
3/4 C. butter, softened
3/4 C. sugar
3/4 C. packed brown sugar
2 eggs
1 t. vanilla
1-1/2 C. flour
1-1/2 C. Golden Grahams cereal, crushed
3/4 C. + 2 T. quick cooking oats, divided
1 t. baking soda
1/2 t. baking powder
1/2 t. salt
1 C. salted peanuts, divided
1 C. (6 oz.) semisweet chocolate chips, divided
In a large mixing bowl, cream butter & sugars. Add eggs, one at a time, beating well after each addition. Beat in the vanilla. Combine the dry ingredients (including the cereal & 3/4 C. oats); gradually add to the creamed mixture. Stir in 3/4 C. peanuts & 2/3 C. chips.
Spread into a greased 13x9x2" baking pan. Coarsely chop the remaining peanuts; sprinkle over the top with the remaining oats & chips. Bake at 350° for 25-30 minutes or until golden brown. Cool on a wire rack; cut into bars. Yield: about 2 dozen
