Christmas Pickles
(2 different recipes)
Christmas Pickles #1
1 (No. 2 1/2) can pineapple, diced
1 pt. maraschino cherries (whole- red and green)
1 lb. figs, quartered
2 c. vinegar
1 c. water
1 lb. gherkin whole pickles
1 stick cinnamon
1 c. seedless raisins
2 c. sugar
20 whole cloves
Boil vinegar, sugar, water, cloves and cinnamon for 10 minutes. Then combine with fruit.
Let stand for several days before serving. Keep refrigerated. Nice to put in small canning
jars and give for Christmas gifts.
Christmas Pickles #2
1 lb. sour pickles
1 lb. sugar
maraschino cherries
Slice drained pickles into 1/4-inch sections. Weigh pickles and sugar, 1 pound each. Place
into covered jar and stir every day. When sugar is dissolved, add cherries. To have this
ready by Christmas prepare the pickles and sugar in the first week of December. Makes
lots.
